This is stingless bee honey from the tropics (Malaysia: Sarawak). It's a sweet and sour honey with propolis naturally dissolved in it. Pot honey (stingless bee honey) is characterized by its smooth texture and the fruity acidity derived from propolis. Among them, this "Acacia/T.b" has the strongest acidity and is a very rare honey that contains a lot of polyphenols. You might be surprised at first by the woody aroma, strong acidity, and slight sweetness, which you wouldn't expect from honey, but you'll gradually get hooked. It tastes like balsamic vinegar and can be used in dressings. It's also recommended to add a little to sweet jam and eat it with bread. About the Apiary This honey is harvested from Acacia mangium, a tree that is widely planted in Malaysia for construction materials. Beekeeping is carried out in a plantation on a small hill far from urban areas. It is honeydew honey, which contains more sweet sap (honeydew) that comes from the base of the leaves than nectar.
