The most distinctive feature of this knife is that it's forged (integrally forged) from a single piece of steel, from the blade to the tang. The handle, however, is finished by craftsmen in Seki, Gifu Prefecture. While Zwilling knives have excellent blades, the handles can sometimes feel a bit rough to the Japanese sensibility, with a boxy shape or the tang protruding. Therefore, we brought them to a handle finishing workshop in Seki, where they were re-finished to fit Japanese hands. We believe it offers a smooth feel and is easy to grip.
