The Junmai Daiginjo “Juyondai Ryuge” is a flagship product of Takagi Shuzo, alongside “Sokou.” Due to its immense popularity, it is also called the “phantom sake.” The phrase “Nanatare Nijukkan” (七垂二十貫) written on the label refers to the ratio of sake to sake lees when the moromi (unrefined sake mash) is pressed during the “josou” (上槽) process, also known as “agefune,” using the traditional Japanese unit of measurement, the shakkan-ho.
