This is a Yanagiba knife made by Togihisa. The blade length is approximately 27cm. It has the "Hon-Tanren" (hand-forged) and "Gokujo" (supreme quality) stamps. It is a single-edged knife. The steel type is unknown, either Shiro-ko (white steel) or Ao-ko (blue steel). The handle is a buffalo horn handle. I had listed this before, but I had it sharpened and polished, so I retook the photos and relisted it. This is my first Togihisa knife, and I don't know who made it, but I believe the "Hon-Tanren" and "Gokujo" stamps are genuine. I initially sanded the handle down to bare wood, but black and red streaks appeared in the grain, so I applied beeswax to the bare wood to give it a subdued color, but it didn't turn out as well as I hoped. I recommend it if you don't mind. The weight balance is good, and it's an easy-to-use size. It's old, but I've sharpened it, so the sharpness is excellent. I think it's a size that can be used by professionals and in general households. The cutting edge is a mirror finish, and the flat surface is also almost a mirror finish. It has been finished with a Shapton 12000 grit stone after using a Kitayama 8000 grit stone.
