This is a Yukifuji deba knife. The blade length is approximately 20cm. The steel is probably Tamahagane (white steel). The handle is black buffalo horn. The blade line was ground flatter than the original shape, so I reground it to maintain the shape. I think it can also be used like a Mioroshi Deba. I repaired and polished the scratches and rust marks, so some fine scratches remain, but it is generally clean, and both the cutting edge and the flat surface are almost mirror-finished. This size is recommended for professionals and general users alike. It has been finished with a Kitayama 8000 grit stone, a Shapton 12000 grit stone, and a natural whetstone.
