This is a Masahana Miooshi Deba knife. The blade length is approximately 24.5cm. It is a single-edged knife. The steel is unknown, but it is probably Shirogami (white steel). The handle is a black buffalo horn handle. This is a Masahana Miooshi Deba knife. Even among Miooshi Deba knives, I think it has a beautiful shape, closer to a Yanagiba knife than a Deba knife. It has a good length, and the blade is also thin, so I think it's easy to use for everything from Miooshi to sashimi. I repaired rust and scratches, but some fine scratch marks remain after mirror polishing. There were also many small chips, which I have mostly corrected, but the small chips near the base of the blade haven't completely disappeared. I corrected them to a level where they don't affect sharpness. (I stopped because I didn't want to grind down too much at the base of the blade. It's small and not very noticeable.) I recommend it if you don't mind. Both the cutting edge and the flat surface are almost mirror-polished and in good condition. I have sharpened and polished it, so I think it can be used for a long time. It's a large Miooshi Deba knife, so I recommend it for both professionals and general households. The whetstones used for finishing are Kitayama 8000 grit, Shapton 12000 grit, and a natural whetstone.
