These sour and salty, traditional umeboshi are called Shiraboshi Ume. The salt used is the coarse natural sun-dried salt commonly used by plum farmers. With a 20% salt content, these umeboshi are a preserved food and have long been eaten as a health food for heatstroke prevention, and recently for dieting and influenza prevention. Please be careful as umeboshi contain pits. The expiration date is one year from the shipping date, but these umeboshi, pickled with 20% salt, do not contain any seasonings or additives, so they can be enjoyed as a long-term preserved food. You can also reduce the salt content to your liking. To reduce the salt, soak approximately 500g of umeboshi in 2-3L of water with 1 teaspoon of salt until the desired salt content is reached. After 12 hours, the salt content will be approximately 12-15%, and after 24 hours, it will be around 10%. After that, drain the water well.
