Weighing 2 kilograms, the roller's weight helps to roll out the dough, making it effortless to rough-roll large pieces of dough or work with stiff dough, saving energy. It can roll in various directions, eliminating the need for the difficult "yotsudashi" technique, saving time. Currently used in soba restaurants in Tokyo and Fukui. Users are spreading as far as Hokkaido. Because you can press from above, it excels at making "juwari" (100% buckwheat), coarse flour, and "sarashina" soba.
