This is a fermented and aged nuka-doko (rice bran bed). You can start pickling vegetables immediately upon arrival. The raw rice bran uses rice bran from organic, pesticide-reduced, low-pesticide, and pesticide-free rice, cultivated with care by farmers. The salt is 100% Makko salt, a sun-dried, unheated salt.
