Ethical Spirits, a distillery venture, produces a new generation of craft gin by distilling sake lees discarded in the sake brewing process and beer. This is from the first batch of gin obtained through crowdfunding. During the COVID-19 pandemic, I couldn't go out for a drink, so I ended up buying it. It's a limited edition of 1,000 bottles, and this one is numbered 247.
