The Jima Gella farm in Ethiopia is located in the Gella village of the Jima region, Oromia State, and produces high-quality coffee. Farm Features: Location: Located in Gella village, Jima region, Oromia State, Ethiopia. Altitude: Situated at a high altitude of over 2,000m, where coffee cherries grow slowly and accumulate sugar. Cultivation Method: Coffee is grown in the shade of forest trees without using pesticides or chemical fertilizers. Processing Method: Processed using the washed method. Washed processing is considered rare, as many Ethiopian coffees are naturally processed (unwashed). Scale: Initially established in 2008 with a farm of about 100 hectares, it now cultivates coffee on 600 hectares out of a total area of 1,000 hectares. Approximately 230 hectares are used for coffee cultivation, and the remaining land is utilized as a forest conservation area. Varieties: Indigenous varieties are cultivated, with 74110, 74112, and 74158 being representative, but they are generally categorized as "indigenous varieties." Producers: Approximately 500 smallholder farmers are involved in coffee production. Certifications: Currently, no specific certifications are obtained, but they are aiming to acquire certifications such as UTZ and RFA. Jima Region: Unlike the major coffee-producing regions of Ethiopia, such as Yirgacheffe and Guji, it is characterized by a wild and robust flavor. This strength is particularly noticeable when roasted dark. Flavor Characteristics: Jima Gella farm coffee has the following flavor characteristics: Acidity and Sweetness: A balance of sweet fruitiness like lemon candy, candy-like sweetness, and ripe orange flavors, along with a gentle citrus acidity and sweetness. Body and Mouthfeel: It has a full body and a substantial mouthfeel. It is also characterized by being spicy, robust, and having a rich texture. Aftertaste: A refreshing and clean aftertaste like lime, and a lingering chy flavor like spices and cardamom. It can also have a flavor similar to black tea.
