Gyuto knife, blade length 17.9cm, 129g, spine thickness approximately 1.8mm near the heel. I thought it might be an older brand, but it's actually from Takeuchi Hamono Seisakusho Co., Ltd. in Mino City, next to Seki. It's a current model. Only the mark seems to be new. By the way, the 18cm version costs 4600 yen. It's a right-handed single-edged knife, but the material is stainless steel. It has considerable hardness and springiness. The handle has a rough texture, I think from the beginning. They applied paint, but the roughness remains. There's a crater-like mark about 3cm from the base, but it includes the boundary between the soft iron and steel, so I think it's original. I don't think it will rust from there. It seems like I can use it for a while. I sharpened it well, put an edge on it, and polished it. Please see my profile for the detailed restoration process.
