This time, two types of casks aged for over 18 years were used (60% refill sherry casks, 40% first-fill bourbon casks). The aroma is smoky, with a core of the rich and華やかな aroma of ripe apples with honey, mixed with sultana raisins, honey, damp leaves, truffles, and peat. The taste is peaty and spicy. It is very oily, and the sweetness of orange marmalade and honey harmonizes with the salty umami of kippers (smoked salted herring) and bacon, and dark chocolate is added to the finish, leaving a long aftertaste.
