This is a Hitomoji Mitsuhide sujihiki knife. The blade length is approximately 15cm. It is single-edged. I believe the steel is V-Gold No. 1 (because it's a SWORD). It is made entirely of steel. It has the SWORD stamp. In terms of shape, it's similar to a boning knife, but the blade is thin, so I've classified it as a sujihiki knife. The neck of the blade was a bit too pronounced, so I corrected it by grinding down the throat of the blade by about 3-4mm. I repaired many rust spots, but small rust pits and scratches could not be completely removed. I recommend it if you don't mind. This thin-bladed sujihiki knife has various uses, so it's popular and sells quickly, so don't delay. The flat and cutting edge are almost mirror-polished. It's also lightweight and generally beautiful, and I especially like the shape. The size makes it suitable for both professionals and general households. The sharpening was finished with Kitayama 8000 grit and Shapton 12000 grit stones.
