Please understand the following points as these are green beans: * Roasting is required before consumption. * Hand-picking is not performed, so some defective beans may be included. * Brazil beans, in particular, have a lot of chaff (the thin skin on the green beans). This chaff will come off during roasting and may adhere to the roasting equipment and heat source. * During roasting, especially when roasting dark, smoke will be produced from the coffee beans. As a personal preference, here are some recommended roasting levels: * Brazil No. 2, Screen Size 17/18: City Roast, French Roast This bean has a good balance of bitterness and acidity. It is relatively easy to roast, and the color changes during roasting tend to be as beautiful as those shown in books and on the internet. * Colombia Supremo: Full City Roast The acidity is slightly stronger than Brazil. Because it is a thick bean, roasting it slowly to cook the core thoroughly will allow you to enjoy a rich flavor. * Peru G-1: French Roast This coffee has a gentle bitterness with a rounded flavor, like dark chocolate, rather than just being bitter. * Mandheling G1: Full City to French Roast This is a popular brand for those who prefer bitter coffee.
