This is "Koji-Tomida Hon Mirin." New, unopened product. Expiration date: 2027.02 Made using traditional methods since its establishment in 1917 (Taisho 6). It is enzyme-free and made only from glutinous rice, rice koji, and distilled spirits, and is characterized by its high extract content (nutrients such as amino acids). It has a sweetness and umami reminiscent of sweet candy, and is excellent for adding luster and richness to dishes. With an alcohol content of approximately 14%, it is classified as liquor and can also be enjoyed as a beverage (e.g., in highballs). A highball recipe is enclosed. Thank you very much.
