Innaki ↓ The base spirits are kasutori shochu and chicory shochu, with juniper berries as the only botanical. You can enjoy the aroma of coniferous forests within the ginjo fragrance, and the flavor can be appreciated straight, with soda, or with tonic. Tatsumi Distillery is located in Hachiman-cho, Gujo City, in the central part of Gifu Prefecture. Generally known as Gujo Hachiman, it is a castle town that spreads around the Yoshida River, which branches off from the Nagara River. The soil differs between the north and south sides of the Yoshida River, and the south side, where Tatsumi Distillery is located, is mainly composed of limestone and basalt. There are many limestone caves on this side, and high-quality spring water flows abundantly from them. Right behind Tatsumi Distillery, there is a place where the streams from two water sources converge, and because it is a valley, it is a dark and humid land. Tatsumi Distillery uses the water from the Innaki River as its preparation water. The water temperature is stable at around 14°C throughout the year, and the hardness is about 65 degrees, which is medium-hard water (according to Mr. Tatsumi, it is classified as medium-soft water in Japan).
