It's used for "cloth proofing" of hard breads like French bread, and is suitable for proofing while maintaining the shape of the shaped dough. Since it's large, it can be cut in half and used as two pieces. It's thick and the edges are unlikely to fray. I bought it with enthusiasm, but never had a chance to use it.
