We harvest high-quality, home-grown daikon radishes by hand, one by one, and carefully smoke them in a dedicated smokehouse for about three days. We are particular about the wood used for smoking, using apple wood, etc. We manufacture the entire process, including pickling. Beer-pickled "iburigakko" is, as the name suggests, "iburigakko" pickled in beer. We use this method to bring out the flavor, so there is almost no alcohol, and children and the elderly can enjoy it with peace of mind.
